Enjoy St. Patrick’s Day guilt free
When March comes around, the registered dietitians at Swedish Hospital have the opportunity to celebrate not only St. Patrick's Day but National Nutrition Month! Did you know that classic Irish dishes—if prepared properly—are nutrient packed?
Here’s how staple Irish foods stack up in nutrients:
1. Potatoes
Potatoes are a great source of carbohydrates. In addition to this energy-booster, they’re packed full of fiber, potassium vitamin C and vitamin B6.
2. Cabbage
Cabbage is also a great source of fiber and vitamin C. It’s also rich in phytochemicals, which scientists have suggested may fight free radicals, including those that later turn into cancer!
3. Corned Beef
To round it all out, corned beef is rich in protein and vitamin B12.
